Blue Cheese Oysters on the half shell

These cheesey oysters make a great appetizer!

20 minutes after shucking

Ingredients:
8 oysters, shucked, on the half shell
1 clove garlic, chopped
1/2 cup crumbled blue cheese (or feta)
1/4 cup panko bread crumbs
2 tablespoons unsalted butter, softened
1 teaspoon minced fresh tarragon

Directions:
Preheat the oven to 350F.

Place the oysters in their shells on a rimmed baking sheet. Can use rock salt to balance.

Combine the garlic, blue cheese, panko bread crumbs, butter, and minced tarragon in a bowl and mix well.

Top each oyster with some of the blue cheese mixture.

Place the baking sheet in the oven and bake for 13 minutes, broil for 2 minutes until the blue cheese topping is bubbly and starting to brown.

Remove the blue cheese oysters from the oven and serve hot.

Caution: shells will be hot!

Cook's Notes:
You can heat in shell oysters in microwave for 40s on high to facilitate shucking.
